Recipe Connection: Broccoli Soup

Ingredients
  • 1/2 cup chopped onion
  • 1 tablespoon olive oil
  • 1 tablespoon whole wheat flour
  • 1/2 can chicken broth (5 ounces)
  • 1/2 can water (5 ounces)
  • 10 ounces frozen chopped broccoli
  • 1/2 teaspoon tarragon
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon thyme
  • black pepper to taste
  • 1 cup skim milk
Instructions
  1. Saute onion in olive oil until soft.
  2. Add flour and cook for one minute, stirring constantly.
  3. Add chicken broth and water gradually and stir until well-blended.
  4. Add broccoli and seasonings.
  5. Bring to a boil. Reduce heat, cover and cook until broccoli is tender (about 15 minutes).
  6. Add milk and simmer another 5 minutes.

This is a lean, nutrient-dense meal that is relatively low in calories.
